Proper training on both food and physical safety in a kitchen is now required by the state of Maine.
Someone who is certified needs to train all staff so they are familiar with food service safety standards.
We offer a comprehensive 3 hour food and physical safety training module for all kitchen staff based on Serve Safe and HACCP standards.
All establishments are required to have a
Certified Food Protection Manager (CFPM)
that manager is responsible to train all employees.
Note:
"In the event that during an inspection by a Regulatory Authority, the person in charge is not able to make the demonstration required by the Maine Food Code or there are multiple critical violations present during such inspection, the Department may thereafter require every person in charge for such eating establishment to be a certified food protection manager."
